A lot of families in Asansol prefer eggless cakes — for religious reasons, for elders, or just personal preference. At Sweet Bloom Bakery you never have to ask, because every cake we make is 100% eggless by default. Our whole bakery is eggless.
That's an important difference from a bakery that "also does eggless". In a mixed kitchen, eggless cakes are baked on the same trays and with the same tools as egg cakes. Mine never are, because there is no egg here to begin with.
Taste
Honestly, most people can't tell. I use a curd-and-milk base for eggless sponges, which keeps them soft and moist. Butterscotch, chocolate truffle, red velvet, vanilla and mango all work brilliantly eggless.
Chocolate is the flavour where eggless genuinely wins — cocoa and curd together give a fudgier, deeper crumb than a light egg sponge does.
Texture
Eggless sponges are a touch denser than the egg version — closer to a bakery mud cake than a fluffy sponge. For most designs (drip cakes, floral cakes, bento cakes) this is actually a bonus because the cake holds decorations better.

How I bake without eggs
Eggs do three jobs in a cake: bind, add moisture and help it rise. I replace them with a combination of thick curd, milk and a carefully balanced baking soda and vinegar reaction, plus a little oil alongside the butter for moisture. It takes more precision than an egg recipe — the batter is less forgiving about resting time and oven temperature — which is exactly why I bake in small batches rather than big trays.

Same as any other cake — 24 hours' notice is enough for most designs; 4–7 days for tiered and wedding cakes.

What I can't do
I'd rather be honest: I don't make vegan cakes, because my recipes use dairy — butter, milk, curd and cream. Eggless yes, dairy-free no. And while I can reduce sugar a little, I don't make sugar-free cakes, since the texture suffers more than most people expect.
