How to keep your cake fresh through an Asansol summer

Asansol summers are hot and humid, and a good cake deserves better than a warm car dashboard. Here's how I recommend handling your Sweet Bloom cake once it leaves my kitchen.
May and June here regularly cross 40°C, and cream starts losing its structure well before that. None of this is complicated — it's mostly about keeping the cake cool and keeping it flat.
Before pickup or delivery
Try to plan pickup close to the time you'll serve it — ideally within 2–3 hours. If you're driving, keep the AC on and the cake box flat on the seat, not on your lap and not in the boot. The boot of a parked car in Asansol sun can reach 60°C in minutes, and that's the fastest way to lose a drip design.
If you're on a two-wheeler, tell me in advance. I'll set the cake a little firmer, use a sturdier box and skip the most fragile decorations so it survives the ride.
Buttercream and whipped-cream cakes
Both are cream-based and will soften above 25°C. As soon as you get home, place the cake (still in its box) on the middle shelf of a clean fridge. Don't stack anything on top.
- Take the cake out 20–30 minutes before serving so the sponge softens.
- Never store a cake near strong-smelling food like onions or curry — sponge and cream absorb odours very quickly.
- If your fridge is very cold, the buttercream can dull — let it come back to room temperature slowly.
- Don't put the cake in front of the cooling vent; that spot freezes and cracks the cream.
Whipped cream is the more delicate of the two. If your celebration is outdoors or in a non-AC hall in peak summer, ask me for buttercream instead — it holds shape at higher temperatures.
Fondant and sculpted cakes
Fondant sweats in the fridge, so store the cake in a cool, dry room instead — an AC room around 22°C is ideal. Keep it boxed to protect it from dust.
If a fondant cake has already been refrigerated and comes out beaded with moisture, don't wipe it. Leave it alone in a dry room and the surface will set again as it comes to room temperature.
Fresh fruit and chocolate decorations
Fresh mango, strawberry and other fruit toppings should go on as late as possible, which is why I usually finish those cakes just before delivery. Chocolate shards, bonbons and drips soften fast — keep those cakes chilled right up to the cake-cutting.
Power cuts and long parties
Power cuts are a real part of an Asansol summer, so plan for one. Keep the fridge closed and it will hold its temperature for several hours. For a long party, don't leave the cake on the table for the whole evening — cut it, serve it, and put the rest straight back in the fridge.
Cake-cutting tips
Use a long knife dipped in hot water and wiped dry between slices; it goes through chilled cream without dragging. For a bento cake, a simple butter knife is plenty. And take the photos before the cake sits out — the first ten minutes are when it looks its best.
Leftovers
Wrap slices individually in cling film and refrigerate. Cream cakes are best within 24–48 hours; a plain butter cake keeps for 3 days. If you're storing a half cake, press cling film against the cut face so the sponge doesn't dry out.
