Cake care & storage

How to keep cream cakes safe in Asansol's heat, power cuts and short car rides.

A fresh cream cake is a perishable dessert, and Asansol's weather is hard on it. From March to October the safest plan is simple: collect the cake as close to your cutting time as you can, keep it flat and level in the car with the air conditioning on, and put it straight into the fridge when you get home — box and all, on the middle shelf, away from anything strongly flavoured.

Take the cake out about fifteen to twenty minutes before cutting so the cream softens and the sponge stops tasting cold and dense. If a power cut is likely, keep the fridge closed rather than moving the cake; a closed fridge holds temperature for hours. Leftovers keep well for two days refrigerated, covered loosely so the cream doesn't dry.

Fresh flowers, chocolate drips and whipped-cream piping are the parts that suffer first in heat, so if your celebration is outdoors or late in the evening, tell me and I'll set the finish firmer for you.
